When it comes to sneaky ways to get spinach into your children's food, this is super cunning, super quick, and super delicious.
Ingredients & method
240g baby spinach 2 cloves of garlic A slug or two of good olive oil A slug of lemon juice 1 disc of feta cheese 1 handful of cashew nuts (you can also use traditional pine nuts, or walnuts) A little salt to taste A bit of freshly ground black pepper. Basically chuck it all together and blend. The end. You can play around with the quantities depending on taste. It took me longer to do the photo than it did to make it. It's so quick. This makes a great dip. A nice thing to dollop on some soup. You could have it as a topping for fish. You could use it to top some chicken breasts, or stuff them with it. You could stir it into a pasta sauce, or curry. It's so easy to disguise it to get kids to eat some spinach. You could play around with the nuts, substitute for different ones. Go down the trad. route and use pine nuts. I just used cashews because I had some. It’s also really great to put on pizza.
